Recipe of Cold Zucchini Soup

Ingredients

  • 800g of zucchini.
  • 1 lemon.
  • 1/2 bunch of coriander.
  • 2 onions.
  • 2 egg yolks.
  • 75cl of chicken broth.
  • 8 tablespoons of olive oil.
  • Salt and pepper.

Preparation

  • Peel the onions and slice them.
  • Dice the zucchini.
  • Heat the broth.
  • In a saucepan, put 2 tablespoons of olive oil and cook the onion.
  • Add the zucchini. Stir.
  • Add salt and pepper. Stir.
  • Pour in the broth.
  • Leave to cook for 20 minutes over low heat.
  • Squeeze the lemon.
  • Mix the egg yolks with the lemon and olive oil.
  • Blend the zucchini adding the eggs.
  • Put in the fridge.
