Zucchini stuffed with ground meat

Here is a nutritious and very healthy recipe: zucchini stuffed with minced meat.

Ingredients:

  • 2 zucchini
  • 1 small onion
  • 1 garlic clove
  • 400g minced meat
  • 200g natural crushed tomato
  • Oregano and basil to taste
  • 70g grated Emmental cheese (or other)

Preparation:

  • Preheat the oven to 200ºC.
  • Wash the zucchini, cut them from top to bottom in half and make cuts in the inside of the zucchini for better cooking.
  • Place the zucchini on a baking sheet and bake until tender (about 15 minutes).
  • Carefully empty the zucchini with a spoon and set aside.
  • Chop the onion finely and sauté in a non-stick frying pan with the finely chopped garlic until done.
  • Add the minced meat, the inside of the zucchini, and sauté until it takes color.
  • Add the crushed tomato and spices to taste, stir well and let reduce over medium heat.
  • Stuff the zucchini, add a little grated cheese on top; bake for 5 more minutes and ready!
