Recipe of Poutine

Ingredients

  • 8 potatoes.
  • 600g of cheddar cheese.
  • 2 shallots.
  • 2 cloves of garlic.
  • 50g of brown sugar.
  • 5 tablespoons of balsamic vinegar.
  • 20g of butter.
  • 50cl of chicken broth.
  • 1 small can of tomato paste.
  • 1 pinch of cayenne pepper.
  • 2 cloves.
  • 1 tablespoon of cumin.
  • 2 bay leaves.
  • 3 tablespoons of cornstarch.
  • Frying oil.
  • Salt and pepper.

Preparation

  • Peel and mince the shallots and garlic.
  • In a saucepan, melt the sugar in a little water with the shallots and garlic over medium heat.
  • Pour in the balsamic vinegar, add the butter and reduce the heat.
  • Pour in the broth and add the tomato paste and spices.
  • Mix and simmer for 5 minutes.
  • Put the cornstarch into the sauce and make it thicken for 5 to 10 minutes over low heat.
  • Cut the potatoes into fries and fry them.
  • Drain the fries.
  • Cut the cheddar in pieces and place them on the fries.
  • Cover everything with sauce.
