Pierogi – Traditional Polish Dumplings

The most traditional polish dish are the dumplings, in polish it’s called pierogi. The most popular ones are stuffed with potato – chese filling and taste delicious. If you want to try something typical in Poland, it should be pierogi! There are a lot of recipies for pierogi, but I will share with you my grandma’s recipe,which is the best in the world!

Ingredients:

Dough: 
  • 2 cups of flour
  • 1 teaspoon salt
  • 1 cup water (lukewarm)
Potato- cheese filling: 
  • 2 pounds of potatoes (boiled)
  • 8 ounces cottage cheese or dry curd
  • 3 tabelspoons onion sauteed
  • Salt and pepper to taste

Preparation

Filling:

Peel potatoes, boil them and then mash tem. Mix potatoes with sauteed onion and cottage cheese.

Dough:

Place 2 cups flour in a large bowl or on a work surface and make a well in the center, then add the salt and a little lukewarm water at a time. Bring the dough together, kneading well and adding more flour or water as necessary. On a floured work surface, roll the dough out thinly and cut with a 2-inch round or glass.

Spoon a portion of the filling into the middle of each circle, then fold dough in half and pinch edges together as on the photo. Boil pierogi in salted water. Watch out and do not boil too many dumplings at a time. When the pierogi rise to the surface, continue to simmer 2 minutes. Pierogi are ready!

Serve warm with caramelized onions or skwarki(pork cracklings) and a dollop of sour cream (or youghurt if you are on a diet).
