Recipe of Gravad Lax

Ingredients

  • 2 salmon fillets of 500g
  • 50g of powdered sugar
  • 50g of coarse salt
  • Chopped dill
  • Peppercorns

Preparation

  • Remove the fish bones from the fillets and wipe them dry.
  • In a flat container, place the first fillet with the skin down.
  • Mix the salt and the sugar.
  • Sprinkle generously with salt and sugar.
  • Place the second fillet on top of the first, skin side up.
  • Place a plate on top with weights.
  • Leave to marinate in the fridge for 12 hours.
  • Turn the fillets over.
  • Leave to marinate for 12 hours.
  • Cut into thin slices.
