Recipe of Cauliflower Quiche

Ingredients

  • 1/2 cauliflower.
  • 200g of Paris mushrooms.
  • 100g of smoked bacon.
  • 100g of parmesan cheese.
  • 2 eggs.
  • 10cl of fresh cream.
  • 1 pinch of nutmeg.
  • 1 shortcrust pastry.
  • Salt and pepper.

Preparation

  • Preheat the oven to 210°C.
  • Roll out the dough in the mould, prick it with a fork and bake it for 10 minutes.
  • Cut the mushrooms.
  • Cook the bacon in a pan with the mushrooms.
  • In a salad bowl, beat the eggs with the cream and 80g of Parmesan and nutmeg.
  • Add salt and pepper and mix well.
  • Place the cauliflower, bacon and mushrooms on the shortcrust pastry.
  • Cover with the egg mixture.
  • Add the rest of the Parmesan on top.
  • Cook for 20 minutes.
