Shrimp ceviche, “ceviche de camarón” in Spanish, – one of the most popular Ecuadorian ceviches! It’s very popular all around Ecuador, but especially at the beach. No wonder, it’s delicious and a perfect dish for seafood lovers!
Ingredients
- 1kg shrimps, tails off, thawed, cooked
- 4 tomatoes, diced or thinly sliced
- 2 red onions, thinly slice
- 1/2 cup (10-15 limes) fresh lime juice
- 3/4 cup (1 orange) orange juice
- 115g cup tomato ketchup
- 1 tablespoon mustard
- 1 bunch fresh cilantro, chopped very finely
- 2 tablespoons light olive oil
- Pepper
- Salt
- 1 bell pepper (red or green), diced (optional)
Preparation
- Soak onion slices in salt water for about 10 minutes, rinse well and drain.
- Mix all the ingredients together in large bowl and let it sit in the fridge for 1-2h.
- Serve with nachos, chifles (fried green banana or green plantain chips) patacones (thick fried green plantains), or even buttered popcorn!
