Salmon and Leek Quiche

Check out this really easy quiche recipe!

Let me share with you a French recipe. While we all know the traditional Quiche Lorraine I have decided to make you discover another type of quiche we enjoy just as much. Easy to cook and perfect for people on a budget just like me!

Ingredients
1 shortcrust pastry
3 slices of smoked salmon (or you can use slice of trout it is cheaper to salmon and tastes just as good)
2 leeks (only use the white parts)
3 eggs
50g of grated cheese
2 tablespoons of double cream
25cl of thickened cream
Salt
Pepper
Grounded Nutmeg

Cut the white parts of the leeks in slices and cook them in a pan on a low heat with butter (Small advice: if you want them to melt in your mouth, boil them in water for 10 min beforehand), add the 2 tablespoons of double cream and leave them to simmer for 5 minutes.

Preheat the oven up to 200° Celsius (392° Fahrenheit).

In a bowl, whisk the 3 eggs and add the thickened cream, add the 50g of grated cheese, bit of salt, pepper and grounded nutmeg. Finally mix the leeks and the preparation altogether.

Spread the shortcrust pastry in a tart tin and pour the preparation in it, then add the slices of salmon (or trout) on the top and cook in the oven for 45min.

Enjoy this recipe I stole from my mom. When I am too lazy to cook every night or don’t know what I should eat this is what I go for and it is always a killer!
