In the Balkans, Tarator is a popular cold soup, it can also be referred to as a liquid salad.
It’s Bulgarians’ favorite summer food, and it can be served in a bowl as a soup, or in a glass as a drink.
It’s a recipe you definitely have to try!

Ingredients
500g yogurt
250 ml water (if you want it as a soup) or 1L water (if you prefer it as a drink)
1/2 cucumber
Salt
Garlic clove
Optional:
2 teaspoon olive oil (optional)
Pepper (optional)
Dill (optional)
Walnuts (optional)
Directions
**Tarator could be served as a soup in a bowl or in a glass like a drink.

Peel and chop cucumber (2 options – you can cut cucumber into cubs or plane away).
Press garlic clove, and chop dill and crush walnuts.
Shake yogurt until it gets liquid and then add water, cucumber, salt and garlic clove.
Beat well.
If you to serve the Tarator as a soup, you can add oil, dill and pepper.
Don’t forget to add ice cubs if you want it cold.
