Chicken Rica-Rica Manado

Ingredients

  • 1,5 kg chicken, cut into 12 pieces
  • 1 tablespoon candlenut
  • 15 cayane pepper or serrano pepper
  • 1 cm turmeric
  • 1 cm ginger
  • 2 medium red onion 0r 10 shallot
  • 5 garlic
  • 1 tablespoon salt
  • 1 teaspoon pepper
  • 1 teaspoon coriander seed or powder
  • 1 block chicken bulion
  • 1 cm galangal
  • 2 lemongrass, crushed and tied
  • 2 bay leaves
  • 3 kaffir lime leaves, thin slice
  • 1 pandan leaf, tied (optional, if you can find it)
  • 2 tablespoon brown sugar
  • 1 tablespoon sweet soy sauce (kecap manis ABC, optional. you can find it in online marketplace or asian grocery)
  • 2 lime
  • 2 bunch of basil or 3 bunch sweet basil/ thai basil, thin slice
  • 450 ml water

Preparation

  • soak the chicken first using lime juice so that the fishy smell disappears
  • blender the spicy chicken rica-rica seasoning in the form of cayenne pepper, candlenut, red onion od shallot, garlic, pepper, coriander, salt, ginger, galangal, and turmeric using blander machine until smooth or chopper machine if you like litlle bit rough
  • heat on medium heat
  • add the spices that have been chopped or blend
  • add the lime leaves, lemongrass, pandan, and bay leaves. Cook until the aroma is fragrant.
  • add the chicken, then stir until the chicken changes color.
  • add sweet soy sauce, stir again.
  • pour water into the pan, add brown sugar and chicken bulion. Stir back.
  • simmer until the water starts to reduce which is a sign that the spices have soaked in the chicken (45 minutes)
  • add basil or sweet basil/ Thai basil, stir well.

Notes

  • For chili, you can adjust to taste. If you like it spicy, you can add it. You can also add curly chilies so they are not too spicy.
  • When adding lemongrass, you only need to use the part that has purple in it. Because, that’s the only part that has a fragrant aroma.
  • When the new chicken is added, increase the heat so that it cooks quickly.
  • You can also cover the pan occasionally so that the chicken cooks quickly.
  • In addition to being crushed, lemongrass can also be cut into thin slices.
  • The process of cooking chicken rica-rica should be until the texture is greasy.
