Preparation

  • all ingrediets that was thin slice put on plate or bowl
  • add sugar, salt, and lemon juice
  • grill the shrimp paste dirct heat ( with fire) until fragrant or you can add in oil
  • heat the oil and poured into the sambal and mix

Shrimp paste or prawn sauce is a fermented condiment commonly used in Southeast Asian and Southern Chinese cuisines. It is primarily made from finely crushed shrimp or krill mixed with salt, and then fermented for several weeks.   • 5 tablebspoon hot cooking oil
  • 1 teaspoon salt

Sambal Bawang (Sambal Garlic and Shallot)

Ingredients

  • 100 gr cayenne pepper or serrano
  • 100 gr red onion or shallot
  • 5 pcs garlic
  • 70 ml cooking oil
  • 1 tseaspoon salt
  • 1 tablespoon sugar
  • 2 kaffir lime leaves
  • 25 ml water

Preparation

  • chilies washed thoroughly. Coarsely grinded the onion, chilies, garlic. You can also use a chopper, just grind it coarsely to feel the texture
  • Heat the cooking oil, medium heat
  • add the ingredients was grinded and kaffir lime leave, strin until fragrant about 10-15 minutes and the coulur change into litlle bit brown
  • Add water. Cook until the water is reduce.
  • Add sugar and salt to taste.
  • After the chili is cooked, let it cool and then put it in a jar if you want to keep it.

  • This sambal is usually served in restaurants or at home
  • This sambal is very suitable to be enjoyed together with dishes with typical fried foods such as fried fish, fried tofu or fried chicken

  • 1 pc medium size tomato
  • 5 pcs red onion or shallot
  • 1 pcs garlic
  • 6 pcs caycane pepper or serrano pepper
  • 1 block shrimp paste (terasi)
  • 5 tablespoon cooking oil/ sunflower oil
  • 1 teaspoon salt
  • 1 teaspoon sugar

  • grill the srimp paste with direct fire until fragrant.
  • blend raough with blender machine or chopper tomato, red onion or shallot, garlic, pepper, and shrimp paste that was grill.
