Ingredients
Serving 2 portion
- 1 kg pomfret, snapper, sole, or any kind of fish you like
- 5 pcs garlic
- 10 pcs shallot
- 1 cm turmeric
- 1 teaspoon coriander seed
- 3 pcs candlenut
- 1 cm galangal
- 2 lemongrass, crush and tied
- 3 kafir lime leaves
- 1 tablespoon salt
- 1 teaspoon white or black pepper
- 1 tablespoon white sugar
- 1 pcs lemon or lime
- 1 cup of cooking oil/ sunflower oil
Preparation
- clean the fish and marinated with lemon and salt, keep it in the refrigerator for 2 hours
- Blende with blander machine garlic, shallot, turmeric, coriander seed, candlenut, and galangal. Add a little bit of oil to make it into a paste.
- add cooking oil into the pan, use medium heat, and add the paste, stir until fragrant
- add lemongrass, lime leaf, sugar, salt, and pepper, stir well about 5-8 minutes until fragrant, set aside
- rub the fish that has been washed and marinated with paste was cooked before
- grill fish and rub the fish continuously until fish is cooked well
Notes
- This paste can use for any kind of seafood like squid, shrimp, prawn, lobster, etc
- The paste also can be as applied as a marination
