Ikan Bakar (Grill Fish)

Ingredients

Serving 2 portion

  • 1 kg pomfret, snapper, sole, or any kind of fish you like
  • 5 pcs garlic
  • 10 pcs shallot
  • 1 cm turmeric
  • 1 teaspoon coriander seed
  • 3 pcs candlenut
  • 1 cm galangal
  • 2 lemongrass, crush and tied
  • 3 kafir lime leaves
  • 1 tablespoon salt
  • 1 teaspoon white or black pepper
  • 1 tablespoon white sugar
  • 1 pcs lemon or lime
  • 1 cup of cooking oil/ sunflower oil

Preparation

  • clean the fish and marinated with lemon and salt, keep it in the refrigerator for 2 hours
  • Blende with blander machine garlic, shallot, turmeric, coriander seed, candlenut, and galangal. Add a little bit of oil to make it into a paste.
  • add cooking oil into the pan, use medium heat, and add the paste, stir until fragrant
  • add lemongrass, lime leaf, sugar, salt, and pepper, stir well about 5-8 minutes until fragrant, set aside
  • rub the fish that has been washed and marinated with paste was cooked before
  • grill fish and rub the fish continuously until fish is cooked well

Notes

  • This paste can use for any kind of seafood like squid, shrimp, prawn, lobster, etc
  • The paste also can be as applied as a marination
