Flammekueche

Flammekueche is a dish that originated in the French region of Alsace. It was created by the farmers of the region to check the temperature of the oven before putting in the pizzas.

Ingredients

  • 1 short crust pastry
  • 2 onions
  • 200g of bacon
  • 50g of butter
  • 25cl of fresh cream
  • Nutmeg
  • Oil

Preparation

  • Preheat the oven to 260°C.
  • Peel and chop the onions.
  • Roll out the short crust pastry on the floured baking sheet.
  • Melt the butter in a frying pan and fry the bacon gently for about 5 minutes. Take it out     and pat it dry with paper towels.
  • Put the onions in the pan and let them melt for a few minutes.
  • Remove from the heat and mix in the bacon, onions and cream. Add a pinch of nutmeg and cover the pastry with this mixture. Drizzle with oil.
  • Bake in the oven for 15 minutes.
