Baileys Chocolate Poke Cake

One of my personal favorite desserts is the all time classic chocolate cake. Although, the perfect chocolate cake is hard to find. In the pursuit of this glorious delight, I stumbled upon this slightly adult version of this dessert. Perfect for girls’ night in and dinner parties.

Ingredients

  • Cooking spray

For the cake:

  • 1 3/4 cups all-purpose flour
  • 1 3/4 cups sugar
  • 1/2 cup cocoa
  • 1/3 cup instant non-fat dry milk
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp fine salt

For the filling:

  • 1 14-oz can sweetened condensed milk
  • 1/3 cup heavy cream
  • 1/3 cup cocoa powder
  • ¼ cup Baileys

For the frosting:

  • 1 cup butter, softened
  • 5 cups powdered sugar
  • ½ cup Baileys
  • ¼ cup cocoa powder
  • 1 tsp vanilla extract
  • ½ tsp salt
  • Chocolate curls, for garnish (optional)

Preparation

Preheat the oven to 350°F/ 180°C. Line a 9”-x-13” pan with parchment and spray it with cooking spray. Add all dry cake ingredients to a mixing bowl and mix thoroughly, add milk and mix as needed. Pour the mixture into prepared pan and bake until a toothpick comes out clean, about 25 minutes. Let cool for 10 minutes.

Using the bottom of a wooden spoon and poke holes all over the cake.

To make the filling: in a medium bowl, whisk together sweetened condensed milk, heavy cream, cocoa powder and Baileys. Pour filling over the poked holes and spread with a spatula. Refrigerate for 1 hour.

Meanwhile, make the frosting. In a large bowl, combine all the frosting ingredients and using a hand mixer, beat until smooth. Add the rest of the powdered sugar and beat until fluffy.

Spread frosting over cake and garnish with chocolate curls. Serve.
