Caipirinha cupcakes

Limes, brown sugar, a shot of cachaça – does that sound familiar? Sure, that’s a caipirinha! We’ll have a round for everyone today, but no cocktails, we are talking about cupcakes.

  • 150g flour
  • 1 tsp. baking soda
  • 1 pinch of salt
  • 60g butter
  • 130g brown sugar
  • 1 egg
  • 2 tbsp. lime juice
  • 1 tsp. lime abrasion
  • 150ml milk
  • 1 tbsp. Cachaça
  • green food coloring
  • 300g cream cheese
  • 200g mascarpone
  • 100g powdered sugar
  • 3-4 tbsp. lime juice
  • lime slices & zest to decorate

Mix flour, baking powder & salt in a bowl.

In a second bowl, mix the sugar and butter until fluffy, add the egg and stir for about 2 minutes. Next, stir in cachaça, lime juice & green food coloring, half of the flour mixture, then the milk and finally stir in the remaining flour quickly, just until everything is well mixed.

Fill the muffin cups 3/4 with the cake mixture & bake in the lower third of the oven for about 20 minutes.

After baking, let the muffins cool down for a few minutes.

Mix 300g cream cheese with 200g mascarpone & 100g powdered sugar to a cream, stir in lime juice, fill in a icing bag & spray onto the cupcakes.

Decorate with lime slices and / or zest as desired.
