Ice, Ice Baby … What a summer! All we want is to lie on the beach and eat ice cream every day. But that is quite expensive and have you ever thought about how many calories ice cream have? With this delicious, healthy sundae you don’t have to worry about it.
- 2 ripe bananas
- 1 organic lemon
- 100g frozen blueberries
- 5 tablespoons of maple syrup
- 100g Greek yogurt
The day before peel 2 bananas, cut into slices, spread in a freezer bag and freeze.
Wash the lemon under hot water, dry, peel the skin thinly, halve the fruit and squeeze it out. For the sauce, heat the blueberries in a pot, stir in 2 tablespoons of maple syrup and lemon peel. Puree the blueberry mix and let it cool.
Puree the frozen banana pieces with yoghurt, lemon juice and 3 tablespoons of maple syrup in a blender. Stir in blueberry sauce and arrange with blueberries in a bowl.
