If you are looking for a fast, healthy and delicious soup, you will find it here with a creamy sweet potato soup with carrots. This soup is light, easy to prepare and delicious.
- 1 onion
- 5g ginger
- 1 red chili pepper
- ½ lemongrass
- 2 carrots
- 2 sweet potatoes
- 400ml coconut milk
- 5g cilantro
- salt and pepper
- 1tbs oil Vegetable broth for 500ml
Peel onion and chop. Scrape the peel of the ginger with a spoon and chop.
Wash the chili pepper, core it and chop it roughly. Squeeze out the lemongrass, remove the outer, hard layer and chop. Prepare 500ml hot vegetable broth.
Heat 1 tbsp oil in a large saucepan. Add onion, lemongrass, ginger and chilli and fry over low heat for about 6 minutes.
In the meantime: Wash carrots and sweet potatoes, peel and cut them in about 2 cm pieces. Add sweet potato and carrots and sauté for about 10 minutes. Douse with vegetable stock and cook for about 8 minutes.
Add coconut milk and simmer for about 10 more minutes until the vegetables are soft. In between: wash the coriander, shake it dry and chop it roughly.
Remove the soup from the hotplate and puree with the blender. Then put it back on the stove and warm it briefly. Season to taste with a little salt and pepper.
