Gnocchi with Spinach and Tomatoes

A perfect comfort food that is at the same time healthy and delicious!

Heads up: for the sauce of this recipe you will need a blender. However I reckon many already existing sauces for gnocchis that don’t require a blender will taste delicious too.


  • Gnocchi (bought in a store)
  • 1 tablespoon of mustard
  • Spinach
  • Cherry tomatoes
  • 1 clove of garlic
  • Unsalted Cashews
  • Salt and pepper
  • Milk or Almond milk (for the vegans)

You can adapt the quantity of ingredients depending on how many people you are cooking for.


Prepare the gnocchis according to the instructions on the package.  Once ready drain the gnocchis in a colander.

In a blender, place the cashews with the garlic and mustard. Add the milk or almond milk.

Put the sauce in a pot and heat until it thickens up.

Finally pour the gnocchi, the tomatoes and the spinach and cook for about 1 minute or more if necessary.
