As I feel we lack of vegan and vegetarian recipes here is one that seems delicious and easy to make!
- 12 oz / 340 grams of small cauliflower florets
- 1 tablespoon of olive oil
- BBQ Chickpea nuts
- 2 ripe avocados
- 1 tablespoon of lemon juice
- 2 tablespoons of roasted pepitas
- 4 pita flatbreads
On a baking sheet put the cauliflowers and pour olive oil on top of them. Roast in 425 F (220 C) for 25 minutes along with the chickpea nuts.
Mash the avocados and add lemon juice. Spread the mashed avocados all over the pita flatbreads. Top them with roasted cauliflower, chickpeas and the pepitas.
