Lemon and speculoos nibbles

This week, I wanted to share with you a good recipe dripping of greed and love. A little spring discovery by browsing the internet pages of the magazine Femme Actuelle. I will speak of “fondant lemon and speculoos nibbles”. Small square of gluttony refreshing, these bites will delight your taste buds and your guests!

For this recipe, you’ll need to:

  • 2 yellow lemons
  • 6 eggs
  • 250 g of sugar
  • 150 g of speculoos
  • 80 g of pure butter
  • And 65 g of Maïzena (this brand of corn starch)

First, coarsely crush the biscuits and mix them with butter, once melted. With the tip of the fingers, spread the obtained substance in the bottom of a mold square 20 x 20 cm, which bottom is covered with parchment paper. Cook for 12 minutes in the oven, preheated to 180 ° C.

Then, press the 2 lemons to get 15 cl of juice. Filter them and mix with corn starch and sugar. You can then add the beaten eggs.

Your preheated oven, this time at 150 ° C, pour over the dough and continue baking 40 minutes or so, until the preparation is taken. Small advice of chiefs: “If top colors too, put a square of foil on the top, without the border”.

15 minutes out of the oven to cool. Once warm, gently remove from pan and let cool completely.

Place the final touch! You can cut everything into small squares and sprinkle in sugar ice. Decorate your nibbles as you like and serve with heavy cream.
