Handmade Spaetzle with Cheese recipe

  • 400 g flour
  • 4 tablespoons water
  • 3 teaspoons salt
  • 4 eggs
  • 3 onions
  • 300 g cheese (Emmentaler), grated
  • some butter

Method of preparation

Preparation time: 30 min

For the dough, mix eggs, flour, salt and water to get a thick dough.

In the meantime, you can start to boil water with a pinch of salt. Now the really special process of typical Spaetzle begins: Get yourself a flat chopping board and put a layer of dough on it. Take a knife and scrape the dough in little slices into the water. If you are not sure how to do it right, watch this tutorial on youtube. But frankly, as long as there are pieces of dough in the shape of noodles in the water, everything is OK.

The good thing about Spaetzle: they will tell you when they are finished! No, the tasty noodles won’t begin to talk to you, but they will come up after a few seconds and swim up to the surface, after having spent some time relaxing on the bottom of the pot. When this happens, they want to be fished out and put into a bowl.
As soon as the last Speatzle is fished and added with the others in the bowl, put cheese on the warm Spaetzle and mix it.
The last thing you have to do, to be able to eat the best Spatzle you’ve ever tried, is to fry the onions with some butter and add them on top.
Tip: The dish tastes perfect with a big portion of green salad.
